    Annie's Easy-Peasy Kale and Sausage Soup


     

    Ingredients:

    • 1 package Premio Mild Italian Sausage, casings removed and crumbled into small bits
    • 1 small bunch kale, washed and chopped finely
    • 1 sweet onion, chopped finely
    • 1 large Russet potato, peel mostly still on and chopped finely
    • 1 can kidney beans, rinsed
    • 8 cups chicken broth
    • 1 tsp. garlic
    • 1 tsp. Italian seasoning
    • ½ tsp. red pepper flakes
    • Salt & black pepper, to taste

    How to Make Annie's Easy-Peasy Kale and Sausage Soup:

    1. In a soup pot, sauté Premio sausage, onion and seasonings, until sausage is cooked.  Once sausage is done and onion is transparent, add all remaining ingredients to pot and bring to a boil.
    2. Turn to a very low simmer and cook for 2 hours to blend in flavors.  Transfer to serving bowl and serve with crusty bread, butter and a cold, crisp green salad.
