    Arroz Con Salchichas


     

    Premio chorizo and red bean rice medley.

    Ingredients:

    • 4 sliced links (Premio Chorizo or Italian Hot
    • 1/2 cup diced yellow onion
    • 1/4 cup diced red bell pepper
    • 1 Tbsp minced garlic
    • 1 cup cooked canned red beans
    • 1/4 cup diced tomato
    • 1/4 tsp cumin
    • 1 bay leaf
    • 3 cups long grain rice
    • 5 cups chicken stock
    • 2 Tbsp vegetable oil
    • 1 tsp pepper
    • 3 tsp salt
    • 1/2 tsp smoked paprika
    • 1/2 tsp dry oregano

    How to make Arroz Con Salchichas:

    1. In a large shallow pan brown Premio Chorizo Sausage.
    2. Add onion, peppers, tomato, and garlic; cook until glassy.
    3. Add rice and stir for 2 min on high heat.
    4. Add remaining ingredients and bring to a boil.
    5. As rice cooks it will absorb liquid and craters will form in rice, at this point lower heat to low and cover for 13-15 min.

    Yields 10 -12 portions
