How to make Eirini's Famous Sherry Sausage & Shrooms:
Brown sliced sausage in skillet coated with extra virgin olive oil, once browned add in onions, mushrooms and garlic cooking down until onions are translucent in color and mushrooms are starting to brown. Add in Sherry, cover and simmer over low heat for about 20 minutes. Serve as is over pasta or with gnocchi, use as a side dish or stuffing for turkey, chicken or pork. Works great in a grinder too! Serves 5 people for 1 pkg. of sausage, 10 people for 2 pkgs.
Recipe has been in my family for four generations. Freezes well and works great with brocolli rabe over pasta.
