    Gameday Chorizo Torta


     

    Ingredients:

    • 6 Premio Mexican Chorizo Sausages
    • 2 Roma tomatoes, cut into small dice
    • 2 Tbsp. minced onion
    • 1 jalapeno, minced
    • 2 Tbsp. cilantro
    • Juice of 1 lime
    • 6 Tbsp. butter
    • 6 large rolls- Portuguese or Kaiser
    • 1 avocado
    • 1 recipe refried beans (see below)

    Refried Beans:

    • 2 Tbsp. olive oil
    • 1 jalapeno, minecd
    • 1 garlic clove, minced
    • 1/2 tsp. ground cumin
    • 1 tsp. chipotle powder
    • 8-oz. lager style beer
    • 15.5-oz. can black beans, with liquid

    Preparation:

    1. Combine the tomato, onion, jalapeno, roasted Poblano, cilantro and lime in a bowl. Season with salt and mix well; set aside.
    2. Cook the Premio sausages on a grill. While the sausages cook, spread the butter on the buns and toast on the grill. Split the cooked sausages lengthwise without cutting them all the way through (butterflied).
    3. Spread some of the beans on each side of the bun. Place a slice of cheese over the beans and top with the split sausage. Spoon some of the salsa on over the sausage and finish with a few slices of avocado.
    Yields: 6 servings
