    Lauren’s Jambalaya


     

    Ingredients:

    • 2 tablespoons olive oil
    • 1 tablespoon butter
    • 1 medium onion, chopped
    • 1 small green bell pepper, chopped
    • 1 large clove garlic, minced
    • 1/2 tsp. salt
    • 1/3 cup white wine
    • 1 ¾ c. chicken broth (homemade if you’ve got it, canned is also good)
    • 1 cup diced fresh tomatoes
    • 1/2 pound Premio Chorizo Sausage, cooked, cooled, and cut into 1/2-inch slices
    • 1 teaspoon hot sauce (or to taste)
    • 1/4 teaspoon dried oregano leaves
    • 1/4 teaspoon Cajun seasoning
    • 3/4 cup uncooked rice (Basmati or brown)
    • ½ pound shrimp, peeled and deveined
    • * You can also substitute shredded or cubed cooked chicken for the shrimp
