    Premio Butternut Squash Fajitas


     

    Ingredients:

    • 2 Cups cooked Premio Sweet Italian Chicken Sausage (uncased)
    • 1 large butternut squash
    • 1 Cup canned black beans
    • 1 tsp. cumin
    • 1 tsp. chili powder
    • 1 Cup sliced red bell pepper
    • 1 Cup shredded pepper jack cheese
    • 1 Tbsp. olive oil
    • Salt and pepper to taste
    How to make Premio Butternut Squash Fajitas:

    1. In a 400 degree, oven roast a cleaned and cut butternut squash until soft to touch (20-25 minutes).
    2. In a non-stick skillet, sauté Premio Italian chicken sausage with olive oil until cooked through out.  Season with salt, pepper, cumin and chili powder- blend well.
    3. Add black bean and red pepper and simmer for 5 minutes.
    4. Top roasted squash with Premio sausage mixture and shredded pepper jack cheese and serve.
