How to make Premio Chorizo Huevos Rancheros Omelet
Pico de gallo
1. Mix all ingredients together in large mixing bowl and let chill.
1. place all ingredients in small sauce pot and bring to a boil.
2. cover and simmer on low for 10 min.
3. drain and let cool.( room temp.)
4. puree all in blender until smooth.
1. in a non-stick sautee pan cook onions and Premio Chorizo Sausage.
2. beat eggs and cream and add to pan.
3. cook on medium temp until egg begins to firm.
4. add cheese and epazote then fold egg over.
5. cook to desired temperature.
For plating huevos rancheros
1. Place 2 hot corn or flour tortillas in center of plate and put omelet on top of tortillas.
2. smother omelet with salsa.
3. top with pico de gallo.
