    Premio Hearty Chickpea Sausage Stew


     

    Ingredients:

    • 1/2 pound chickpeas, soaked overnight (or 2 large cans chickpeas)
    • 1 large yellow onion, cut into ribbons
    • 3 cloves garlic
    • 1 can diced tomatoes
    • 2 pounds your favorite style Premio Sausage
    • 1 cup dry white wine
    • 1 tsp fennel seeds
    • 1 small branch fresh rosemary (or 1/2 tsp dried)
    • 1 tsp hot red pepper flakes
    • Salt and fresh ground pepper
    • 2 tbspn olive oil
    How to make Premio Hearty Chickpea Sausage Stew:
    Heat olive oil in stockpot, and sautee onion, garlic, spices, and sausages. Add wine and tomatoes. Simmer one minute and add chickpeas. Simmer until chickpeas are very tender (fifteen minutes if canned; up to one hour if dried and soaked). Season to taste with salt and pepper. Serve with white rice. Very yummy hearty stew for a cold night.
