    Sante Fe Sausage Salad Cups


     

    Ingredients:

    • 6 (6 inch) flour tortillas
    • 1 package Premio Hot Italian Sausage, thinly sliced
    • 1/2 cup finely diced jicama
    • 1/2 cup finely diced yellow bell pepper
    • 1/2 cup diced mango
    • 2 Tbsp snipped cilantro
    • 1 green onion, minced
    • 1 medium avocado, peeled, pitted and cut into small dice
    • 1 jalapeno pepper, seeded and minced
    • 1/4 cup sour cream
    • 1 Tbsp lime juice
    • 1 Tbsp vegetable oil
    • 1/4 tsp garlic salt
    • Garnish- lime zest

    How to make Sante Fe Sausage Salad Cups:

    Press each tortilla into a 10 ounce custard cup. Bake at 350 degrees 10 minutes or till crisp. Let cool. Heat a medium non-stick skillet over medium high heat. Add the Premio Hot Italian Sausage slices and saute, stirring till nicely browned. Place in a medium mixing bowl. Add the rest of the ingredients and mix well. Divide the sausage mixture evenly among the tortilla cups. Garnish and serve. Makes 6.
