How to Make Sausage Stuffed Potatoes:
- Boil potatoes with skins on for 10 minutes. Drain, peel, and with a teaspoon, scoop out a deep hole for stuffing.
- Remove casings from sausage, and in a pot, add sausage, bread, butter, parsley, stock and egg yolk; mix together very well. Stuff potatoes carefully.
- Place potatoes on a greased baking dish. Dot potatoes with butter and sprinkle with salt and pepper.
- Bake in preheated oven at 400 degrees (F) for 15 minutes. Remove from oven, allow to cool and enjoy!
