    Sausage-Vegetable Stuffed Peppers


     

    Ingredients:

    • 4 green peppers cut in half,uncooked
    • 1 1/2 lb.Premio Sausage, removed from casings,uncooked
    • l medium onion, finely chopped
    • 2 eggs
    • 2 medium zucchini, shredded
    • 1/2 red pepper, finely chopped
    • 1 14 oz.can diced tomatoes
    • 1/2 c. grated parmesan cheese
    • 1 tbsp. finely chopped parsley
    • 1/2 c. black olives, chopped
    • 2 tsp. fennel seed (optional)
    • Salt to taste
    • Black pepper (as much as you like)

    How to make Sausage-Vegetable Stuffed Peppers:

    • Mix all the ingredients except peppers.
    • Fill peppers.
    • Bake 350 for one hour
    • Serves 4.
