    Taco Meatloaf


     

    Ingredients:

    • 1 package Premio Mexican Chorizo, casings removed
    • 1 lb. lean ground beef
    • 1 lb. ground lamb
    • 1 package Mexican-flavored rice mix
    • 1 cup sour cream
    • 1 package Mexican blend shredded cheese
    • 2 eggs
    • ½ cup smooth salsa
    • 1 medium onion, finely diced
    • ½ green pepper, finely diced
    • 1 jalapeno pepper, seeds removed and finely diced
    • 1 small bunch cilantro, chopped
    • 6 slices pepper jack cheese
    • Salt & pepper, to taste

    How to Make Taco Meatloaf:

    1. In a large mixing bowl, place rice mix, salsa, eggs and sour cream.  Let stand while preparing other ingredients.
    2. Add remaining ingredients into mixing bowl except for slices of pepper jack cheese; blend well. 
    3. Place meat mixture into 2 loaf pans and bake at 350 degrees (F) for 1 hour and 25 minutes.
    4. Place slices of pepper jack cheese on top of the loaves and continue baking for additional 25 minutes or until cheese has melted.  Serve warmed with tortillas, salsa and guacamole, if desired.
