    Tortellini Soup


     

    Ingredients:

    • 1 lb Premio Sweet ItalianSausage, large links. (Not the hot and spicey.) 1/2 onion chopped
    • 6 C. Beef Broth (or bouillion)
    • 16 oz. tomato sauce
    • 2 Cans chopped stewed tomato w/ basil & oregano
    • 1 C. carrots, cut in half circles
    • 1/2 tsp. dried basil
    • 1/2 tsp. oregano
    • 1 small zucchini, thinly sliced in half circles
    • 1- 8 oz. bag cheese filled tortellini
    • 1 T. Parsley
    • Pressed, fresh Garlic to taste
      Grated fresh Parmesan Cheese for garnish

    How to make Tortellini Soup:

    Boil Premio Sweet/Mild Italian Sausage till cooked then slice in half circles and fry slightly with onions and garlic. Drain grease, if any. Add all other ingredients except--tortellini, zucchini, and parmesan cheese. Cook until the carrots are somewhat tender. Add zucchini and tortellini and cook till zucchini is tender. If dinner is delayed, add the tortellini about 10 min. before serving so as not to get too overcooked. Serve with parmesan cheese sprinkled on top. ENJOY!
