Ingredients:

1 package Premio Hot Italian Sausage
8-12 eggs
Scallions
Italian bread (optional)

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Huevos al Premio:

1. Grill Premio Sausage, over medium heat, until they’re almost done. Add scallions to grill and grill until almost done; dice and set aside.

2. Crack eggs and place whites and yolks in a bowl; whisk together, add to frying pan and cook until almost done. Add sausage and scallions to pan, and cook for additional few minutes. Remove and serve on plate or on Italian bread.
