Ingredients:
1 package Premio Hot Italian Sausage, thinly sliced
1/2 cup finely diced jicama
1/2 cup finely diced yellow bell pepper
1/2 cup diced mango
2 tablespoons snipped cilantro
1 green onion, minced
1 medium avocado, peeled, pitted and cut into small pieces
1 jalapeno pepper, seeded and minced
1/4 cup sour cream
1 tablespoon lime juice
1 tablespoon vegetable oil
1/4 teaspoon garlic salt
Garnish- lime zest
- Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
- Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.
How to make Santa Fe Sausage Salad Cups:
1. Press each tortilla into a 10 ounce custard cup. Bake at 350 degrees (F) for 10 minutes or till crisp. Let cool.
2. Heat a medium non-stick skillet over medium high heat. Add Premio Hot Italian Sausage slices and saute, stirring till nicely browned. Place in a medium mixing bowl.
3. Add the rest of the ingredients and mix well. Divide the sausage mixture evenly among the tortilla cups. Garnish and serve.
