Italian Chicken Rolls

Ingredients:

1 pound Premio Premio’s Sweet Italian Sausage
1 yellow onion, chopped
1 red bell pepper, chopped
4 ounce ricotta cheese
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried Italian seasoning, crushed
4 Boneless chicken breast, pounded flat to 1/8″ thickness
4 ounces Swiss cheese
1 cup flour
1 cup buttermilk
1 cup seasoned bread crumbs
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried Italian seasoning
1/2 cup vegetable oil

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Italian Chicken Rolls:

1. Preheat oven to 350 degrees (F). Preheat Skillet. Add Premio Sweet Italian Sausage, chopped onions and bell pepper. Cook until meat is browned. Drain and return to pan. Add ricotta cheese and mix well.

2. Mix salt, pepper and Italian seasoning in flat pan. Coat chicken in seasoning mix on 1 side.

3. Fill each chicken breast with 2 heaping tablespoons of sausage mixture, seasoned size up, with sausage. Add 1 ounce of Swiss cheese.

4. Roll chicken breast, securing with Toothpicks.

5. Mix seasoned bread crumbs, salt, pepper and Italian seasoning. Dip rolled chicken in flour, buttermilk, and coat with breadcrumb mixture. Brown in vegetable oil until golden.

6. Transfer Italian chicken rolls to baking pan or cookie sheet and place in oven. Cook for an addition 15 minutes.
