Sassy-Sausage Bean Soup

Ingredients:

6 ounces Premio Premio’s Sweet Italian Sausage
1/2 cup onion, chopped
2 cloves garlic, peeled and chopped
1 (15 ounce) can small white beans
1 (15 ounce) can black beans
2 tablespoons olive oil
1/4 cup red peppers, chopped
1 teaspoon dried oregano
2 (14.5 ounce) cans chicken broth
2 cups escarole, trimmed and chopped

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Sassy-Sausage Bean Soup:

1. In a saucepot over medium-high heat, cook onions and garlic in olive oil for 2 minutes. Add Premio Sausage to pot and cook until browned. Stir in remaining ingredients.

2. Increase heat to high; bring to boil. Reduce heat to medium and let simmer 5 minutes. Garnish with Parmesan cheese, if desired.
