Sausage Enchiladas

Ingredients:

1 pound Premio Premio’s Sweet Italian Sausage
2 cups shredded Monterey Jack cheese, divided
1/3 cup chopped tomatoes
1/2 cup sliced olives
1 small onion, chopped
3 1/2 cups salsa, divided
12 (6 inch) flour tortillas

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Sausage Enchiladas:

1. Cook Premio sausage; cool and drain.

2. Preheat oven to 350 degrees (F). Grease a 13 x 9 inch pan.

3. Combine 1 cup shredded cheese with the sausage, tomatoes, olives, and onion. Stir in one cup salsa.

4. In a separate large bowl, place the remaining salsa. Dip each tortilla into sauce, coating evenly. Place 1/12 of the filling down the center of a tortilla.

5. Roll up and place seam side down in the pan. Repeat for all tortillas. Spread remaining salsa over the top of tortillas.

6. Bake at 350 degrees (F) for 25 minutes. Remove and sprinkle with remaining cheese. Bake an additional 3 minutes, or until cheese melts.
