Ingredients:
1 pound Premio Hot Italian Sausage
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 medium onion
2 (24 ounce) jars marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
Salt, to taste
- Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
- Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.
How to make Sausage Scallopini:
1. Brown Premio Sausage over medium heat in lightly oiled, large frying pan. Once sausages are browned, cut into discs and cook each side until cooked through.
2. Meanwhile, cut the peppers and onion, julienne style. Add to pan with cooked sausage. Lightly salt this mixture and continue cooking over medium heat until vegetables are softened.
3. Add marinara sauce, cover and cook for at least 20 minutes on low heat (for best results, cook on low for a few hours, stirring occasionally- this incorporates all the flavors of the sausage and peppers into the sauce).
4. Meanwhile, cook penne pasta until al dente. Drain and add to sauce mixture.
5. Add mozzarella and parmesan cheeses; mix thoroughly and serve.
