Ingredients:
1/2 pound Premio Sausage (choose your favorite)
2 tablespoons chopped celery
2 tablespoons chopped onion
1 egg
1/2 small package stuffing mix
Salt and pepper to taste
3 tablspoons melted butter
Dy bread crumbs
1/4 cup oil
1/4 cup wine
4 ounces mushrooms
- Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
- Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.
How to make Sausage Stuffed Chicken Breast:
1. In a saute pan, saute Premio Sausage, celery and onion. Reduce heat and mix in stuffing mix and egg.
2. Place mixture into chicken breasts; secure with toothpicks. Brush with melted butter and roll in breadcrumbs.
3. Place in baking dish with 1/4 cup oil and 1/4 cup wine. Bake at 350 degrees (F) for 30 minutes.
4. Add mushrooms and cook an additioanl 15 minutes.
5. Transfer to serving platter. Pour liquid and mushrooms over chicken; serve.
