Ingredients:
1 package Premio Premio’s Sweet Italian Sausage, removed from casing and crumbled
1 medium onion, chopped fine
4 medium fresh mushrooms, cleaned and sliced
1/2 cup dry white wine
2 Italian pear tomatoes, diced or 1 cup sun dried tomatoes, diced
1 cup fresh, chopped spinach
1 package 4 cheese tortellini
1 cup heavy cream
1/2 c milk
2 tablespoons butter
1 tablespoon flour
- Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
- Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.
How to make Sweet Italian Sausage with Four Cheese Tortellini:
1. In a large, heavy skillet or sauce pot, over medium heat, add the oil and heat. Add the Premio Sausage and onion, and cook for 6-8 minutes, breaking up sausage as it cooks.
2. Add wine, mushrooms, spinach and tomatoes; cook for additional 5 minutes. Drain liquid.
3. In a separate sauce pan, melt 2 tablespoons butter and gradually add flour to make a roux. Gradually add cream and milk to sauce pan. Season to taste with salt and pepper.
4. Add the meat, vegetables and tortellini together to combine. Gently stir and serve.
